What does this wine taste like?

Dido delights with aromas of ripe wild fruit combined with herbal and sweet spicy tones. Mountain herbs blend in the nose with a tantalizing hint of mandarin orange peel which now forms part of its aromatic history. In the mouth, Dido has plentiful well-integrated and fluid tannins. Freshness is at the heart of the wine while earthy sensations display its soul. 

An expressive and precise wine, with perfectly-integrated oak and a splendid blend of varieties. It is flavoursome, rounded and silky; fresh and moreish from start to finish. To sum up, Dido embodies purity and flowers, juiciness and balance.

The red 2018 Dido coms from their youngest vineyards, mostly under 30 years old, on granite soils that provide freshness and tension to compensate for the warmth of the southern Montsant. It's a blend of Garnacha, Syrah, Cariñena, Merlot and Cabernet Sauvignon from five different growers. The Garnacha and Syrah are fermented together with some 30% whole clusters and a long maceration, and the rest of the grapes fermented destemmed with a short maceration, all with indigenous yeasts and mostly in concrete vats. Sixty percent of the volume matured in barrels and foudres of sizes varying from 300 to 4,000 liters, and the rest was kept in concrete for 16 months. It seems like the combination of granite soils and the cooler year has worked wonders for this wine, which showed spectacularly. They say this is what they wanted to achieve with this wine; it is floral, expressive, clean and focused, with perfectly integrated oak, all the varieties complementing each other—not showing any varietal character—and a juicy palate with astonishing balance. This is truly outstanding. This comes at an unbelievable price and should be widely available. 88,357 bottles, 520 magnums and 35 double magnums produced. It was bottled between December 2019 and January 2020.

Winemaking

Paying the utmost respect to the magic of the terroir, in the winery they use a proportion of whole grapes and local yeasts and a short maceration period of just a few days. To maintain this profile, the ageing process is divided among large wooden vats and concrete tanks, an excellent material to highlight the primary character of a great wine like this.

Sandy granite soils warm up in the day and cool at night which means grapes ripen more slowly and obtain stronger aromas and textures. Perhaps this special landscape and climate is the reason behind the unique and seductive mandarin orange aromas we have mentioned above. The tension and purity of these special soils are maintained by partly ageing the wine in concrete tanks to provide the balance to the warm climate of the region.
