Amarone della Valpolicella

Amarone della Valpolicella is a wine region located in the Veneto region of Italy, specifically in the province of Verona. This area is known for producing some of the most luxurious and coveted wines in the world. In particular, Amarone della Valpolicella is revered for its full-bodied red wines made from dried grapes.

The process of making Amarone della Valpolicella starts with harvesting only the best quality grapes after they have ripened fully on vines. These grapes are then dried on wooden racks for several months until they lose almost 40% of their weight and become raisin-like. 

During this time, the natural sugars concentrate and produce a rich and complex flavour profile that’s unique to this wine region. Once these dried grapes are pressed, they undergo fermentation using wild yeast which can last up to 30 days or more.
