Safrà (which means saffron) is a red wine from Celler del Roure, a family winery praised by both renowned wine critics and the general wine-loving public. Owned by Pablo Calatayud, an agricultural engineer and above all an enthusiast of the world of wine, the winery has managed to recover the almost extinct local grape variety Mandó, and use it to create excellent wines such as Safrà.

Safrà forms part of the winery's "vinos antiguos" (traditional wines) collection which aims to recover the forgotten winemaking heritage of Mediterranean landscapes. It is made exclusively from local varieties from south-east Spain such as Mandó and Arcos, an almost-lost variety which adds a degree of freshness and complexity to the blend. The wine is fermented in stainless steel tanks and old stone deposits using local yeasts and 30% of whole bunches, with gentle macerations at low temperatures. The finished wine is left to age for 6 months in old 2,800-litre clay vessels in the winery's underground cellar.

Safra is a spectacularly floral and aromatically complex wine, offering depth and flavour with an unexpectedly restrained palate. All in all, a fresh and subtle yet very elegant wine with fine tannins.

    Vintage 2019 - 94 PARKER

    The 2019 Safrà was produced with a base of Mandó, but it's a different Mandó from Parotet, livelier and more fluid. They say it's a red with the soul of a white. In any case, both wines change in 2019 with the addition of Arcos. They harvest the grapes early and use some 30% stems for the vinification in stainless steel with indigenous yeasts. This 2019 is a blend with 30% Arcos, an almost forgotten grape they are recovering and to which they are paying very much attention. Like many of the other wines, it matured in ancient buried 2,600-liter tinajas in their impressive 17th-century cellar. I've always liked the floral and aromatic expression of this wine, which has nice aromas and complexity, developing beautiful notes of sour cherries; and in the palate, it's more serious than you expect, longer, deeper and very tasty. This is more ethereal than Vermell and less spicy that Parotet. I think it has gained in freshness and complexity with the addition of Arcos, which is part of the blend for the first time in 2019. In fact, this is better than ever! 20,000 bottles produced. It was bottled in June 2020.

    Mainly young vines. Light bright crimson. Light bitter note on the end. Relatively simple but this would be a nice, low-tannin red to drink without food.

    Great Wine

    Hint of sour cherry on the nose, mellow and rounded taste, the right balance of the acidity v/s sweetness gives the neutral note I personally like. Short and neutral aftertaste as well leaving a feeling of fullness. Needs few hours decanting to open up.

    Spicy licorice with some vanilla overtones.

    spiced aroma but pleasantly palatable. Lots of licorice and almost chilli on first tasting, but vanilla finally coming through to soften at the end.

    Not good

    Bought this since it had a good Parker rating - how I do not know! Maybe it’s an acquired taste - but not for me

    Añada 2019

    Encontramos un vino sorprendentemente fresco y de gran punch. Alta acidez, con el alcohol muy presente pese a su bajo porcentaje (12.5%), muy envolvente. Paso por boca ligeramente seco, con los taninos en un punto óptimo de madurez y con aromas retronasales marcadamente minerales, a arcilla húmeda, sin duda aportados por su crianza en las tinajas de barro. Post-gusto muy agradable, con la fruta fresca como protagonista (fresas) y con un curioso toquecito vegetal que parece "cabernetear", a pimiento verde. Vino muy bien ensamblado, combinando taninos bien esculpidos, frescura y mineralidad.
