The wine

Pardas is a Xarel·lo wine suitable for any wine connoisseur; splendid, dedicated work in the vineyard and the fine contribution of excellent wood, which pick up the fruit to perfection.

Pardas is a mixture of candied fruit, cherimoya, overripe pear and, unusually, farm-fresh cheese. A rise in temperature brings out red-scented and lactic aromas, which, when tasted blind, would make anyone think of a Montsant red or carbonic maceration wine.

No need to panic when your taste buds are on the receiving end of the first impact! The wine does have a certain roughness and a good tannic structure making themselves felt on the palate. The vigorous mineral acidity and touch of tartness work out extremely well in the end.

Fermented and aged in French oak (90%) and chestnut (10%) barrels for 6 months.
