The wine

The Pheasant's Tears Tsolikauri is a single varietal originating from the alluvial soils of the Baghdadti hills. The immediately pressed grapes ferment in qvevri with native yeasts and the resultant wine ages in the same container for nine months.

Made with light skin contact, it exhibits a delicate nose of citrus fruits, grass, beeswax and honeysuckle. On the palate it's fresh and slightly bitter, with the odd hint of tea leaves and a warm finish.

Serve between 8ºC and 10ºC
