The wine

A single varietal Mtsvane, a pale-skinned white grape which is among Georgia's most popular, originating from decomposed basalt soils lying at an altitude of 550 metres. After straightforward pressing, alcoholic fermentation driven by native yeasts takes place in amphorae sunk into the ground. The wine rests for nine months in these qvevri before being bottled without any added sulphur.
