What does this wine taste like?
A cava with a fine, elegant bubble, in which the chardonnay brings freshness and finesse, while the pinot noir adds body and a light tannic structure that's uncommon in a sparkling wine. The long months of ageing on lees translate into toasted and bready notes that integrate with white fruit and citrus, resulting in a complex cava with good ageing potential and a profile that sets it apart from simpler, more commercial cavas.
Drinking and storing
Given its complexity and structure, this is a cava that's better suited to accompanying a meal than serving as a simple aperitif. It's recommended to serve it between 6ºC and 8ºC, in a white wine glass (rather than a flute) to better appreciate its range of aromas.

Its structure and toasted notes make it especially versatile at the table: it works very well with shellfish, strong-flavoured fish, rice dishes and elaborate starters, and even with semi-cured cheeses.

The winery
Parés Baltà

The winery was founded in 1790 and since then it has never lost the tradition of being a family concern, passed from parents to children. The wines are produced from the 5 estates which the family owns in the area of Pacs del Penedès, on land that ranges from 170 to 750 metres in altitude, which favours the production of wines with clear differences and styles.
