The Tordiruta has fabric and deserves greater attention: great blue cheeses (Gorgonzola, Roqueford, Blu Stilton, Fossa di Talamello), perhaps served with ripe Williams or Abate or Decane pears, fresh or even better cooked in a little of the same wine, water and a little sugar, with a brushstroke of chestnut honey, or loin of figs from the Marche region, or fruit mustard from Mantua.
