G.D. Vajra Langhe Nebbiolo Claré J.C.

The result of a limited production experiment, Claré J.C. rediscovers an ancient Nebbiolo production technique, dating back to the 17th century, when the wine was bottled when fermentation was not complete, to keep it fragrant and lively in the mouth. The must is left in contact with the grapes (18% with the whole bunch, including the green parts) for a limited period. This brief maceration gives a very fresh, vinous, dynamic nectar of exceptional drinkability. A stark Nebbiolo, reminiscent of cherry and pomegranate juice, with puffs of sweet spice and orange blossom. The taste is decidedly acidic, fruity and with silky tannins. Excellent in summer, sipped chilled with antipasti, spicy dishes, delicate fried foods and barbecues.
