The wine

Don PX Toro Albalá Convento Selección is a wonderful sweet wine with more than 50 years of age. It is an extraordinary, singular sweet with a great complexity that will delight us alone and in a leisurely way, although we can also serve it together with recipes where a game meat with red fruit or mushroom sauce is the protagonist, with chocolate desserts or as an excuse. to lengthen those special table tops. Made with clusters of 100% raisined Pedro Ximénez grapes, Convento Selección comes from an old tradition that is still preserved: to keep at least one cask of wine made in special years, allowing it to have a long static aging and waiting for the optimal moment to bottle it. This extraordinary Don PX Convento Selección 1958 is qualified with 98 Robert Parker points and awarded with the Gran Oro Mundus Vini.

It is a wine aged for several generations, which has been aged in barrels of amontillados so that the wine and the wood merge over time and obtain unmatched results.

It is presented in a sheer black dress with iodine reflections. Pure black with iodine reflections. When shaken, the glass is tinted with precious iodine tones. Very intense on the nose, reminiscent of bitter orange marmalade along with roasted, balsamic, raisins, plums and dried apricots. Its entry is very sweet, although its slight acidity and pleasant bitterness make it a fresh wine.

Toro Albalá

Although founded in 1844 by Antonio Sánchez Prieto in a mill known as La Noria, near the town’s castle, it was José M. Toro Albalá who restored and established the new winery in 1922 at its current facilities on the site of Aguilar’s former power station. Today, it is Antonio Sánchez Romero who has overall responsibility for the running of this centuries-old winery.
