The Tolaini estate is located in the heart of the Chianti Classico area, where Sangiovese has a unique character. The company's technical team has identified in Vineyard n. 7 of Montebello a special correspondence between the soil, rich in clay and marl, the slope and the exposure; characteristics that over time have given life to an impeccable and original Sangiovese. The Chianti Classico Gran Selezione, after resting in the cellar for 30 months, is harmonious, savory and fruity, capable of expressing elegance and intensity in the glass.
Fermentation lasts 20 days, during which the temperature of the vats is controlled by computer. Replacements are performed every 8 hours and one delestage per week. Fermentation follows a short period of post-fermentation maceration. The malaolactic fermentation is carried out in truncated conical wooden vats of 48 hl or in tonneaux. The wine remains for 18 months in wood, 6 of which on its fine lees. This is followed by a further 6 months of refinement in steel and 6 months of refinement in the bottle.
This sensual wine features notes of red cherry, tobacco, leather, spices and licorice. The elegant and well balanced tannins with the fruit highlight a fabulous degree of acidity that makes it a complex wine, with undeniable power and structure. The finish is long and pleasant, like an authentic Sangiovese.

A young winery in Castelnuovo Berardenga that channels part of its innovative experimentation into organic vineyard management. Pierluigi, who returned from America to Chianti specifically to devote himself to the territory and wine, gives us a range with a clear but traditional style.
