The wine
Valpolicella Superiore Ripasso Acinatico is obtained from a Valpolicella Classico of the same vintage through a second fermentation and a second maceration on the still slightly sweet pomace of Amarone and Recioto. This operation allows the wine to enrich itself with body, color, aromaticity and alcohol content.
The vintage Valpolicella Classico is "passed over" on the Amarone pomace once alcoholic fermentation is completed, technically in fact it is a refermentation on the pomace which is still rich in characteristic aromatic components, color and sugars; the ripasso therefore refines 12 months in tonneaux during which it carries out the malolactic fermentation completely, thus becoming a wine with unique and unmistakable characters.
Intense ruby red color. The bouquet, very large, has a combination of fresh and evolved notes such as ripe fruit, spices and tobacco. The taste is full, decisive and with soft tannins that integrate perfectly. Recommended with roasted and boiled meat dishes and aged cheeses.

Smooth and balanced ripasso
Bold taste and yet very smooth. Oaky taste with ripe dark fruits like cherries, raisins and plums. There is a nice balance between sweetness and dryness too. Let it decant for a while and it will open up nicely. Goes really well with meat dishes or for meditative purposes. Will buy again!

Very good Ripasso made by a good producer. Good tannins, medium acidity and a good complexity with a long finish.
