The wine

Fresh, and intensely purple, a recognisably Toro wine but with none of the excessiveness many other local wines have led us to believe as inevitable. It has a strong alcohol content just like most Toro wines but with a more balanced sensation. With a full but not heavy feeling, it has found a balance between acidity and maturity. Although it is deeply coloured, it is less so than other Toro wines as care is taken to extract just the right amount of colour and tannins from the grape skins to achieve its excellent aspect and feel, while not becoming aggressive in the mouth. Balsamic and spicy, it is a wild wine in the best of senses. It has aromas of blackberries and blackcurrants, dust, and even violets — a fragrance seldom found in Toro. The altitude of the vineyards and excellent work in the winery can be tasted with every sip. Bay leaves and orange peel appear, adding to its pleasant and rounded sensation in the mouth. It has the strength of a Toro wine but embellished with fineness and elegance, even with a hint of fine salt. Flavoursome and moreish, it shows a sweet and honest soul wrapped in sharp clarity. Its tannins are easily noticeable on cheeks and gums but with a pleasant and finely granulated feel. It is ideal for drinking now or for keeping for a few years as it has the body to continue to improve in the bottle. It can be drunk alone, with a good book or in good company, or paired with roasted or barbecued meat, cured sheep milk cheese from Zamora, or a dish of grilled vegetables.
