The noble grapes of the various vineyards that make up the company are chosen manually vinified in steel fermenters followed by the elevation in small French oak barrels where the Nobile acquires all its characteristics. Complete the aging period with a few months of bottle which coincide with the hot summer months to better face its first summer as a finished product. The Noble vintage of Massimo Romeo is marketed only in September following the second year of production, when it reaches the best conditions for tasting. It is a traditional reading of Nobile, and offers a classic and respectful vision of the use of Sangiovese Prugnolo Gentile. Aging wine, it is excellent with main courses such as the Florentine steak and aged cheeses.
