The ripasso technique on Amarone pomace gives Ripasso Le Ragose characteristics of structure and alcohol content, suitable also for medium-term aging. The presence of sugary residue in the marcs of Amarone allows the refermentation of Valpolicella with extraction of the typical characteristics of Amarone: aromas of dried fruit, alcohol and structure.
