The harvest takes place at the end of October but these few grapes become must only after a skilful and careful raisining lasting about 6 weeks. The must is fermented partly in new Allier barriques and partly in stainless steel tanks at a controlled temperature. Subsequently, in late spring, the cuvée is blended and after a year of aging in barrique, the wine is bottled. The refinement in the bottle lasts 6 months so that a ripe Picolit can be presented to everyone and capable of arousing strong emotions.
Golden yellow, it excites with an evolved and very elegant bouquet, with notes of acacia honey and dried fruit. Delicate, full and rightly sweet but never cloying. An authentic meditation wine, it is also perfect to accompany dry biscuits.
