Review
This Agustí Torelló is a large reserve cellar with a minimum of 30 months of aging in the cellar. 40% of the base wine with which it is made was aged for 8 months in French oak barrels. It is a sparkling wine that combines tradition and modernity, barrel and stainless, contrast and forcefulness.
For its elaboration grapes from strains of more than 30 years of the Macabeo variety are used from different plots of the Garraf coastal sub-zone and barrels that acquire prominence in this the only cava with aging base wine of the entire firm. In addition to the aforementioned 40%, another very high percentage ferments in stainless steel tanks at low temperature, while a small percentage of the grape is the result of an early harvest and is used to round the final cupping. The lime and gravel of the soil impregnate the wine with minerality and the usual character of the great Mediterranean wines.
Its appearance in the glass is a pale straw yellow color with greenish reflections and a fine and abundant bubble, with good tear formation. The nose shows that the wood is perfectly integrated with the intense aromas of fruit (baked apples), yeasts and brioche. In the background you feel fine balsamic, roasted and spicy touches that recall the partial passage through oak. The overall sensation is that of a dry and glyceric wine, with dense and creamy foam, which highlights the freshness of the fruit and the notes of vanilla and roasted.
Limited production with numbered bottles and with the date of disgorgement printed on each of the labels, indicating the moment at which the cava ended its aging and being a vitally important fact to predict its possible evolution over time.
