Masciullo Salento Chardonnay

Old clone of Chardonnay characterized by small and sparse bunches. The vines, placed on a limestone shoulder, trained with guyot, give a production of 65 hl / ha. The grapes are harvested in plastic baskets in the first days of August to obtain a fresh and elegant wine that releases all its character two / three years after vinification. The grapes are first cooled by de-stemming and undergo a few hours maceration in the press. The refinement, in steel, on the fine lees, lasts until late spring.
