The wine
What would be the result if two of the most prestigious oenologists in northern Spain worked together to produce a unique wine? Well, the answer is here for all to try and it's called Castro Candaz A Boca do Demo. Rodrigo Méndez, a top wine producer in the region of the Rías Baixas, and his friend Raúl Pérez, a true wizard in the northern Spain winemaking world, have worked together once more to come up with one of the best red wines ever made in the D.O. Ribeira Sacra appellation. The cooler climes of the area of Chantada means harvesting takes place later than in other parts of the Ribeira leading to a risk of rain affecting the grapes. However, it's a risk worth taking when the resulting wine is the magnificent Castro Candaz A Boca do Demo.
Wine production using whole bunches, an understated extraction, and the delicate aromas these two winemakers always achieve, come together to delight us with a light but complex wine which is accessible almost as soon as it's bottled but also has a wonderfully long future ahead of it. Castro Candaz A Boca do Demo shows an austere granite minerality and delicate tannins, with aromas of violets, red fruits of the forest, and blood orange peel. Old vines give the wine a Burgundy character, with an unusual fineness and an infinite range of nuances. Every part of the mouth is seduced by the freshness of this fine wine, while hints of flint fill the nose. Femininity and spices give it a rounded and subtle finish with a long and extremely elegant aftertaste.

Full of flavour
This wine is just beginning to blossom. The tannins are still very present and (on the second day) a bit raw. There is still little complexity, but the fruit flavours are penetrating and powerful and it should improve in bottle once the tannins retreat. I have come to think that Raul Perez prefers big wines to really subtle ones: this one seems to como from Bierzo rather than Ribeira Sacra, which is a bit underwhelming. In that respect I do prefer the Lousas wines by Envinate.

Mencia fresca, aun joven con recorrido en botella, buena acidez, notas especiadas punta de amargor, vino sutil y elegante que huye de la sobrextracción y la intensidad en pos de la finura.

This wine is reminiscent of many others by Raúl Pérez. Anyway you can drink freshly opened. It combines very well with light dishes.
