Produced exclusively with the best Trebbiano and Malvasia grapes from our vineyards, dried for a few months on reed mats in the drying rack, Vin Santo is aged for ten years in small oak barrels of 50 liters, and owes much of its special character to the mother, a centenary indigenous yeast, carefully guarded by Avignonesi.
This Vin Santo is characterized by intense aromas of caramel and dark chocolate, softened by hints of acacia honey, thyme and nutmeg, which open to inviting notes of candied orange and butter biscuits. On the palate this sweet wine reveals infinite taste sensations, including notes of figs, almonds, orange marmalade and toasted coffee beans. A perfect balance between sweetness and acidity leads to a long and sensual aftertaste.
