Cava is made using the traditional method (champenoise) of secondary fermentation in the bottle. Brut Nature is cavas to which no sugar has been added, and their residual content is part of the fermentation process. In Cava Brut a little sugar is added and can have up to 12 grams per litre. Cava is made from a white base wine; for rosé cava, red grapes can be used.
