Alexandre Filaine Cuvée Spéciale

Alexandre Filaine's Cuvée Spéciale is made from grapes grown organically and the Pinot Noir variety is the main protagonist. It ferments using native yeasts in 100 year-old barrels which endow it with a restrained touch of oak, and it doesn't undergo malolactic fermentation.

Its prime characteristic is freshness, centred on a wonderful aroma of green apples, quince and citrus fruits, and also on a vibrant acidity. Mineral hints and suggestions of confectioner's custard complement a really complex aromatic array. On the palate it's direct and expressive, precise and energetic; the oak can be discerned in its structure. Touches of yeast, honey, tarragon, yellow flowers and citrus acidity enliven a vinous, profound and most individual body. It takes its leave gracefully, elegantly and indeed classically, with the flowers and minerality still very much in evidence. Its versatility enables it to join up with a good many dishes, from aperitifs to main courses. Unfortunately, its production is very limited.
