The Domaine de l'Ermitage is carried out by disbudding, systematic and repeated tillage under the row and between rows, trimming, green harvesting, partial leaf stripping. Vinification, light maceration before fermentation, cold and under temperature control. Natural fermentation by "indigenous" yeasts from the estate. Aging in stainless steel tanks on fine lees. Blending of the whole harvest.
Pale gold color with green reflections. Open, lemony, grapefruit nose, enhancing delicate floral notes (lime and mimosa). Spicy, white pepper notes. The attack on the palate is supple, on roundness. The palate is balanced, on freshness, finesse and elegance. Lemon accents mixed with exotic fruits (mango, passion fruit). A fresh and coated finish with a plump extension.
