The single-vineyard 2021 La Danza del Viento Molino Quemado was produced with grapes from a vineyard in the zone known as El Canto de las Brujas in the village of San Martín de Valdeiglesias, a west/northeast orientation at 750 meters in altitude on sandy granite soils. It has 13.5% alcohol and very good parameters, with a pH of 3.25 and 5.94 grams of acidity. It fermented with 90% full clusters and the rest uncrushed grapes and indigenous yeasts for 51 days and matured in used 500-liter French oak barrels for 16 months. It follows the path of cleanliness, elegance and precision of the 2021s and is super expressive, with notes of white flowers and the structure from San Martin with finer tannins. This is not as wide as other years; the wine comes through as fresher and more balanced. 1,024 bottles and 24 magnums produced. It was bottled in May 2019.
