The wine

A Gran Reserva for lovers of Cavas that boast personality and a lengthy period of maturation. A coupage, with 15% supplied by the reserve base wine and at least 42 months of bottle ageing, results in a Cava which is golden yellow in colour with bright glints of gold. The aromas encompass all the complexity gained from its long ageing and thus the nuances derived from the lees are easily discerned, exhibiting notes of toast, honey, plus dried fruit and nuts. On the palate it has fullness and structure, very creamy too, and offers up a perfect balance between sweetness and acidity. Its persistent flavour with plenty of character makes it particularly well-suited to serving as an accompaniment to more robust dishes.

The 2016 Panoramic Imperial Brut was produced with a blend of 50% Xarel.lo, 40% Macabeo and 10% Parellada from a ripe and generous year. It had a dosage of six grams and is round and gastronomical, with 11.5% alcohol and disgorged after 60 months in bottle with lees. It's quite unusual to have long aging and a Brut, but they want to keep it this way. It has a very classical nose of the sparkling wines from the region. 35,000 bottles produced.
