Azienda Agricola Cos

Founded in 1980 by Giambattista Cilia, Cirino Strano and Giusto Occhipinti, three friends who wanted to look back at what had once been their ancestors' business, the Winery takes its name from the acronym of their surnames. Cos has completely changed Cerasuolo di Vittoria with the adoption biodynamic viticulture principles to allow the wine to express the depth and character of the soil.

As Pioneers and dreamers, from 1980 the three founders embarked on a road of uncompromised territoriality, adopting winemaking strategies, like amphora vinification, allowing the wine to speak for itself without any filters. The Winery's vines, with both northern and southern exposures, are set at an altitude of about 250 metres, and magically express this strip of Sicily, whose soil is calcareous-siliceous, clayey and tuffaceous.

Rigour and quality are the principles that drive Cos's biodynamics in the direction of excellence. This results in a Cerasuolo di Vittoria, which stays up to a year in big barrel, which is, vintage after vintage, a paradigm of the denomination, soft, deep, generous, expressive. And it produces a line, Pithos, which has led to the development of historical vines to the most ancient techniques of terracotta vinification with maceration on the skins.

Spontaneous fermentation and native yeasts are also the ingredients of the Nero di Lupo, a great Nero d'Avola of outstanding balance, and Frappato, a perfect blend of agility and sensory depth. On the white front, in addition to the impressive and unique Zibibbo in Pithos, there is the intriguing Ramì, a splendid native grape using only steel, and above all the grandiose Aestas Siciliae, a passito which is enthralling, fresh, full, opulent, almond-scented, sunny and minerally.
