It comes from the Pinot Grigio vineyards planted in Sot Lis Rivis. It is an opulent wine to which the passage in never new oak barrels gives an exceptional aromatic structure. The harvest is delayed as much as possible to take advantage of a particular characteristic of the grape which, once ripe, if left on the plant loses water and weight, concentrating the fruity notes.
Sot Lis Rivis is a balanced wine, with contained acidity and a body supported by flavor. The alcohol is always high but never burning and contributes with a marked fruit to give softness. The citrusy nose is original for a Pinot Grigio and is always in tune with the mouth. It goes well with many dishes, but it is very pleasant on raw tuna and swordfish and on all preparations with blue fish. It tolerates citrus marinades well.
