The white 2018 Certezas is pure Sémillon from a subplot of older vines on very poor soils within the 10 hectares of an old dry-farmed vineyard, the Finca Manoni in El Peral (Tupungato). This is the white signed by Manu Michelini, the son of Gerardo and Andrea, from one of the few dry-farmed vineyards in the zone. It was macerated with the skins for three days and then pressed and fermented in 1,000-liter oak foudre, where the wine matures with the lees until the following vintage comes; then the wine is transferred to 500-liter barrel where it completes the élevage for two years (almost three winters). There are some yeasty and smoky aromas, and it's spicy (until 2018 they were in an old winery, and the air yeasts created some flor), reminding me of some white Burgundies. It was a year of light, and the grapes developed good flavors and aromas. The wine has bones, but it also has meat; it's juicy and round, with amazing structure. This is really superb and should age nicely. 1,500 bottles were filled in June 2020.
