La Salada L'Ermot

L'Ermot is one of Toni Carbó’s wonderful whites, easily recognisable from the La Salada drawing on its label. It’s a Macabeo single varietal, from a sole vineyard, which rests on its lees in stainless steel until the winter’s cold clarifies it naturally and it’s bottled in March, and that’s all. It’s a mouth-filling delight and entices the nose with herbs, apples and lemons.
