Grechetto
A vine perhaps of Greek origin but native to Umbria, the grechetto is the protagonist of Orvieto, one of the most important white DOCs of central Italy that stands out at the foot of the fortress of the beautiful medieval town. A vine endowed with a very strong natural acidity and a very marked minerality, the grechetto is thin, slender, of extraordinary elegance and surprising longevity. Vinified also as a single variety, it is the classic autochthonous Italian white aperitif: very stiff and vertical, sometimes citrine, but at the same time, if you wait enough, capable of giving after a few years more complex and round sensations, to withstand more daring pairings.
