The wine

Tatsima Gris is made from whole bunches of Grenache Gris and Macabeo, grapes particularly suited to maceration on the skins. Grenache, in particular, gives the wine its characteristic salmon colour. There is no wood for ageing, this sort of "reverse rosé" or "unusual orange wine" only stays in steel, thus preserving its typicality and minerality. On the nose, it expresses intense notes of dried fruit, hazelnut, citrus jam, sweet spices, olive and yeast. A wine that is anything but immediate, it explodes on the palate with sapidity, acidity and tannin, with a power and persistence that exclude it from accompanying simple aperitifs and consecrate it as a worthy companion of elaborate first and second courses, even with meat and cheese.
