Review:

Paixar is an iconic wine from the Bierzo region which, after several vintages in the hands of Alejandro Luna, Gregory Pérez and the García brothers, now belongs to the Luna Beberide winery. Its name is derived from the local dialect and refers to the age-old, tiny mountain vineyards which the winery operates alongside local growers to keep the wine-making heritage alive.

As it clearly shows on the label, Paixar is a slate-soil wine, one of refined rusticity. The Mencía grapes used in its vinification come from the steep hillsides of Dragonte, a small vineyard facing south and located at between 700 and 1,000 metres above sea level. There, the old Mencía vines (80 years old) produce a scant half kilo per plant and the singular weather conditions lengthen the grape's cycle by about two weeks.

It was always a powerful and concentrated red, but with each successive vintage it has acquired an extra touch of subtlety, taking some of the limelight away from the oak and highlighting the marvellous fruit of its vineyards. The aim is to keep intervention to the minimum in order to transfer all the vineyard character and varietal freshness to the bottle. Consequently, the grapes undergo cold maceration and ferment solely by means of wild yeasts. It rests for 22 months in French oak barrels and is bottled without filtration towards the end of September.

It's an intense wine, and with a definite Atlantic influence, that combines the harsh nature of the Bierzo's slate terrain with strong contrasts in day and night temperatures. It's mineral, balsamic and spicy, elegantly mingling hints of rock dust and fine smoky nuances with the pleasant fresh fruit and the subtle floral and undergrowth notes. On the palate it's refined, structured, with fine tannins and excellent acidity; profound and having an earthy finish. After a highly recommended decanting, the seductive hints of mandarin peel come to the fore. As it's unusual, worth a mention is that the vintages jump from 2013 to 2015, because in 2014 they were only able to produce 2,000 kilos of grapes; the rest were devoured by wild boars, which occurs ever more frequently in vineyards lying in the midst of natural surroundings.
