The wine
Second installment of Mutant wines, this time with a wine made in the DO Conca de Barbera, vineyards and Planot But Castells in Montblanc (Tarragona), owned by the family winery More Foraster.
The vineyards are at 400 m altitude and have an output of 4,000 kg / ha. The terroir, located on slopes under forest, is poor, rocky and consists of tows containing alluvial clays and sands.
It has carried out a vintage manual maceration prefermentiva 5 days at 7 º C and a 11-day fermentation at 25 ° C. The maceration was carried out with pumping (preferably open) for 21 days. Malolactic fermentation was spontaneous. Bottling is done with filtration plates, light, and bottle aging.
