The wine
The red house wine, a blend of merlot, cabernet sauvignon and cabernet franc, native varieties for your area. Once the wine has fermented many overs are performed (one in the morning and another at night) so as to extract a nice color of their skins and highlight the natural grape tannins. Then the wine is aged in French oak barrels where it will remain for a period of approximately 12-14 months of aging. The structure and consistency is poised a long, often exceeding 10 years from the date of harvest.
