Çimixà

The presence of çimixà in the Ligurian Levant is documented since ancient times, so much so that it can be considered one of the most typical white grapes of the territory, in particular Tigullio, together with bianchetta and vermentino. Almost extinct until the early 2000s, çimixà is now recovered not only as a late harvest grape, but also for the production of dry wines. Not easy to cultivate, it is however quite leathery, enough to express itself well even for macerated wines. Golden yellow in colour, the resulting wine is vertical but complete, with notes of melon and plum, wrapped in slightly aromatic hints, hawthorn flowers and jasmine. The finish has subtle herbaceous and citrus notes. On the palate it is enveloping, well-structured, but reveals a strong sapid, fresh and mineral note.
