Phincas wine comes from vines that are not dedicated to the production of other wines of the winery, limited production wines (Phincalali, Phincaabejera, Thousand Milks): Revilla, Tajo, Piso, and Ribartayo Valdegamarra, vineyards from 350 600 meters above sea level on the southern end of Elvillar, on clay soils, calcareous sandy alluvial ferrous and boulders.
Phincas is composed of 70% Tempranillo, 15% Graciano, 10% Grenache and 5% Viura. The use of white grapes for red wines was common in the past in some areas such as Rioja, among others, and something that some producers, like David, are recovering.
The production takes place in tanks dodecahedra, which by creating a shape convection currents that help interior maceration and extraction of grape components, besides, after the fermentation, the single sinks hat and this improves maceration. Once pressed, entering the wine casks, 50% of which are 400-liter barrels 50% 228 liters of two three wines. The wine is aged for two winters and is decanted at nine months to put together the wine of different terroirs. At 12-14 months the wine is stabilized in the tank dodecahedra, lightly filtered and bottled.
