The wine
In the production of Lytos, the winery selects grapes from their older vineyards. They choose ripe fruit, without letting it reach the over-ripe stage, and then allow the grapes to ferment at a fairly moderate temperature in order to obtain a good extraction of colour and mature tannins. After an ageing process of 10 months in French oak barrels, acquiring complexity and structure, Lytos comes over as smooth and most enjoyable, as well as intense, mature and with good volume. Although this wine can be drunk whilst young, it will also develop very nicely in the bottle.
