Made with grapes grown in old vineyards, over 30 years old, with a low yield and a fine concentration of aromas, Bayanus 375 is not half of a bottle nor the remains of another, but it is actually a special coupage, different from this company’s other Cavas: a slow, traditional fermentation in tank, with the second fermentation in the same 37.5cl bottle that reaches the consumer. (Bayanus first appeared on the market with the 2004 vintage.)
NOTE: The label gives the date of disgorgement, the final date of ageing. Matured for at least 24 months in bottle.
