The wine
Edition number 8 of this series comes from the second bottling, released in October 2007 (the first release was La Bota de Manzanilla 4, extracted in January 2007) drawn out of butts of Manzanilla that the Sánchez Ayala family matured in their cellars, located in the old district of la Balsa, in Sanlúcar de Barrameda. This area, by the River Guadalquivir estuary, used to be surrounded by the fast-disappearing ‘navazos’, lands long cultivated by growers due to the high level of moisture just below the surface.
This blend comes from 12 butts, from a total of 40 comprising the solera, and has given rise to 2,500 bottles. It shares the distinction with La Bota de Amontillado 1 and La Bota de Amontillado 9 of being made with Palomino grapes originating from a single vineyard, Las Cañas, on the Pago Balbaína estate. In the Sanlúcar tradition, this Manzanilla is aged along a dozen scales which are run frequently to allow small amounts to be drawn out (sacas).
A most delicate, fresh Manzanilla, with definite personality, and bottled after very slight filtration to preserve its golden tone and authentic nature.
Ideal as an aperitif or to accompany any type of tapas, especially seafood and fish, salty-flavoured (cooked sausages, salted meats) and vinegary dishes (salads, sauces, gazpacho…).
